Gingerbread cookies are the perfect holiday cookie. They’re almost impossible to mess up and fun to decorate. I didn’t spend a lot of time decorating mine because I only baked them to crumble up and garnish my Gingerbread cupcakes. Feel free to use Jujyfruits, Dots, Sour Patch Kids and other vegan candies with your icing to make them more festive! INGREDIENTS Cookie Dough:

- 1/3 cup canola oil
- ¾ cup sugar
- ¼ cup molasses
- ¼ cup plain soy milk
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ teaspoon cloves
- ½ teaspoon cinnamon
- 1 ½ teaspoon ground ginger
