Sweet Cornbread with Pesto Cream Cheese Topping

These make a great appetizer for any occasion, and just in time for Super Bowl weekend. They're simple to make, but look like they took all day to put together. The cornbread is great on its own too, so feel free to make an extra batch to save for dinner! INGREDIENTS Cupcake Batter:

- 1 cup all-purpose flour
- 1 cup soy milk
- ½ cup granulated sugar
- 1/3 cup canola oil
- 3 teaspoon Ener-G Egg Replacer
- 4 tablespoon water
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
